Blinchiki Recipe

Blinchiki are delicate, thin Russian-style pancakes with a light and slightly buttery texture, perfect for both sweet and savory fillings. Made from a simple batter of flour, eggs, milk, and a touch of sugar, these versatile crepes can be rolled or folded around a variety of fillings, such as fresh fruit, jam, or cream for a sweet treat, or cottage cheese, mushrooms, or meat for a savory option.   1. In a large bowl, whisk together flour, sugar, and salt.
  2. Slowly whisk in the milk until combined and no lumps remain.
  3. Whisk in the eggs, followed by the vegetable oil.
  4. Place a large nonstick pan/skillet over medium low heat. Lightly grease with oil or butter.
  5. Once heated, (with a ladle) add ~1/4 of the batter to the center.
  6. Immediately tilt the pan in a circle to coat the bottom in a thin layer.
  7. Cook until set on top and the bottom turns golden(~2 minutes).
  8. Flip and cook until the other side is golden(~1 minute).
  9. Remove pancake and transfer to a plate.Repeat with remaining batter.
  10. Serve immediately with your desired toppings.
